Ralph and Elio Federico, chefs/owners, celebrate E&V's 49 years of serving the public. Together from the beginning, the brothers started out simply -- making pizza and sandwiches. Believing that practice makes perfect, they gradually expanded their areas of expertise. Advocates of trial and error and unafraid to take a chance, they experimented with recipes and carefully monitored the response. The overwhelming enthusiasm that greeted a Mother's Day creation 25 years ago has made that experimental dish, the E&V Chef's Special (fettuccine served with shrimp, mushrooms, artichoke hearts and prosciutto in a light sauce), one of the most sought after entrees.
In their 49 years of business, Ralph and Elio have seen a lot of restaurants come and go. They attribute their own staying power to their willingness to go slow and steady, with an eye towards the future. They pride themselves on the quality of their ingredients, service and the value of their offerings. Asked to name his personal favorite dish, Ralph volunteered the Zuppa di Pesce, with Boneless Breast of Chicken and Broccoli Rabe running a very close second.
